Home made Vietnam Spring Rolls with Peanut Sauce





Hey, I have been longing to cook some Vietnam Spring Roll, after trying this appetizer from Vietnam Restaurant which is nearby my home. Here i am unfolded my new skill, *sigh* somehow i just realize it was not-so-easy to create one, which is required my patience. The thin rice paper was so sticky after i dip in a water, yet the instruction is written dipped with warm water. Well i tried to "dip" more likely to SINK that Paper Rice with warm water (maybe a little too hot), after a few second, it was gone crazy, like very sticky and hard to fold. I was run out my patience, and i was like DUDE, COME ON! Why i was like underestimate this simple dish. I tried again with just a normal water, not warm, but not cold. Yaaa, it's getting better, and maybe i should more practice to get better shape of this super simple Vietnam Spring Roll.. Need to prepare more fresh ingredients, my lettuce seems a bit sad, its not fresh anymore but yes it still GREEN! LOL i am just kidding. Lets try another time maybe with fruits, should be FUN.

Ingredients:
Rice Paper
Lettuce
Carrot
Cucumber
Edamame
Glass Noodle
Shrimp
Peanut Sauce

Peanut Sauce Recipe:
Peanut
Vinegar
Soy Sauce
Sugar
Dried Basil
Lime Juice
Minced Garlic 

Toast the raw peanut on a pan, then cooled it down for a minutes, take off the outer shell. Blitz in a blender until become a powder. Remove from the blender, and add to a bowl. Add vinegar, soy sauce, sugar, dried basil, lime juice and garlic. Whisk until all well combined. Taste if it fell okay, then you can add some toasted peanut and shredded carrot if desired. Or you can add more seasoning, if the taste is not there yet.
