Rengginang ( Sticky Rice Crackers )

I bought it from Snack Store, Aneka Citra Snack ( ACS ) at Emporium Mall Pluit, In front of Carrefour. It cost idd 14.000 for 100 gram. There are two option, one is with pink colour and the other is white. Pink is cheaper 2k, so i choose white one because the pink colour looks quite scary (i don't know what colouring is used, is it safe for my health, well i doubt). Actually i buy it, because the other day i tried it at my friend house, it taste not bad at all, so i decided to buy it. I search the recipe from google, and the ingredients are very berry simple. You only need four ingredients, Glutinous Rice, Salt, Sugar and Water, but the process take many step and times.  Here's the recipe below with two language, Indonesian and English Version. 



Indonesian Version


Bahan :
  • 250 gram beras ketan, cuci bersih lalu rendam dalam air selama 1 jam
  • 1 sdt garam
  • 1 sdt gula pasir
  • 100 ml  air
Haluskan :
  • 2 siung bawang putih
  • 1 sdt terasi bakar
CARA MEMBUAT  :
  1. Kukus beras ketan, minimal selama 15 menit. Sisihkan.
  2. Campur bumbu halus, garam, gula pasir, dan air. Aduk rata. Rebus sampai mendidih. Tambahkan beras ketan. Aduk sampai meresap.
  3. Kukus minimal selama 30 menit atau hingga matang.
  4. Angkat dan bentuk sesuai selera, lalu letakkan di atas tampah. Jemur.
  5. Setelah satu sisi kering, balik rengginang agar kering merata.
  6. Goreng dalam minyak goreng yang sudah dipanaskan di atas api sedang sampai matang.

English Version

Ingredients A:
250 gr Glutinous Rice (wash thoroughly and soak in water for 1 hour or overnight)
1 tsp Salt
1 tsp Sugar
100 ml Water

Ingredients B:
2 cloves of Garlic
1 tsp of Terasi (Shrimp Stocks Cubes)

How to Make:
1. Steam the Glutinous Rice for 15 minutes. Set aside.
2. Mix the ingredients B (garlic and terasi) with Salt, Sugar and Water until well combined.
Cook in boiling water. Add Glutinous Rice, and stir until the mixed sauces is absorbed.
3. Steam for about 30 minutes or more until it cooked.
4. Take out from the steamer and shape into round or any shape that you prefer. Put under the hot sunshine, to make it dry naturally (it same like Sun Dried Tomatoes, but this is more dry, takes about 2 days)
5. Once the one side is dry, flip and wait until completely dry.
6. If both are done (completely dry), fry in the pan with hot cooking oil (medium heat) until crispy (cooked, be careful not to be burnt)
