Pesto Quinoa Risotto

I still have some leftover Pesto Sauce on fridge. So i decided to make a Risotto from Quinoa with Pesto Sauce as the base ingredients. I love how it turns out, very creamy and well blended into the Quinoa. I forget to sprinkle some toasted Pine Nuts. Later i add a chopped Brazilian Nuts, but not in this picture, it give a crunchy texture.

I love Italian Food, like Lasagna, Pizza, Aglo Olio, Tiramisu, etc. My preferences of cuisine, are quite wide range from Japanese, Indonesian, Western, Korean, Thai Food, into Indian Food, Mexican Food and so on. To be honest, i am trying to be healthy as much as i can, but sometimes i can hold myself to indulge those Guilty Pleasure Food that not counted as a Raw Food or Plants Based Whole Food, which mean i cross the border and i still do love some Baked Salmon or French Fries. Well i am not a Buddhist Vegetarian that strictly not eat any meat, and avoid Garlic, Honey, Egg, or Dairy Product (Milk, Yogurt, Cheese). Because i am still allow myself to eat farm egg, even though i can replace with Flax Egg. But you know, the taste are so different and i am just being healthier eating lifestyle. Please do not be mistaken if i was against the law of Vegan. Peace !!

Pesto Quinoa Risotto


Ingredient :
Cucumber (julienne)
Mukimame (edamame without shell)

Garnish :
Raisin
Black Chia Seed
Dried Parsley
Cherry Tomato

How To :
1. Cook the Pearl Quinoa as direction from the package. 
2. Prepare a Pesto Sauce or you can buy it from any store
3. Boiled the Mukimame (you can use either Frozen or Fresh)
4. Cut the cucumber into julienne shape.
5. Mix Cooked Pearl Quinoa with Pesto Sauce until fully combined
no need add any salt or black pepper
as the Pesto Sauce are seasoned and tasty.
6. Arrange the Pesto Quinoa Risotto in the middle of the plate.
Continue with Julienne Cucumber around the Quinoa and Mukimame around
the Julienne Cucumber. Garnish with Cherry Tomato and Raisin
*) you can replace Raisin with Toasted Pine Nuts.
7. Sprinkle some Chia Seed and Dried Parsley.
8. Ready to enjoy Pesto Quinoa Risotto
