I am not a vegetarian. But i have to admit that i love vegetable , fruits and fish more than red meat like pork, beef and lamb. I love brocolli, cherry tomato, almond, green leaves like Spinach, etc. Then i find a new Superfood called Quinoa. The size is very small, but full of mineral and vitamin source, also good Carbo which is much better than plain rice. Yes when you boiled it, in cooking pan, (quinoa 1 : water 2) it will be fluffier and taste like real rice. For your info, you have to wash it 3 to 4 times to prevent bitter taste. It takes about 15 minutes to cook, depend on how much quinoa you cooked, as i read from the package it suggest to be one cup per day. You can find the benefit of quinoa from my previous post.
Here is my recipe for my very first simple dish with Quinoa.
Ingredients:
1. Pearl Quinoa (wash Quinoa three to four times)
2. Broccoli
3. Enoki Mushroom
4. Cherry Tomato
5. Salt (to taste)
6. Black pepper
7. Apple Cider Vinegar
Topping:
Almond
Brazilian Nuts
How to prepare:
1. Boiled the quinoa with 1:2 (Quinoa : Water) Simmer thoroughly untill the texture become fluffy and the colour goes into trasnculent. Flavour with salt and black pepper according to your taste bud. Set aside.
2. Cooked the broccoli and mushroom until all is soft, but not mushy. I prefer to be slighty crunchy, so the vitamin will keep and not wasted into the boiling water.
3. Plate the quinoa and cooked broccoli together with mushroom.
4. Garnish with Almond, Brazilian Nuts, or any raw nut like pine nut, pecan, walnut.
5. Cut half cherry tomato as a garnish yet it is edible.
6. Slice avocado into small bite, pour a spoon of Apple Cidar Vinegar and sprinkle salt , black pepper. Stir until well combined. Taste according to your preferences. Add into the plate for more beautiful colour and pack of nourishment.
7. Enjoy Quinoa Salad with Veggies and Raw Nuts.
