Gnocchi


Gnocchi with Dried Basil

Ingredients:
Potato
Oat Flour
All Purpose Flour
Green Leaves
Dried Basil
Cheddar Cheese

How to :

Mix Oat Flour with Mash Potato.
I find it was quite mushy instead of a dough texture (should be), so i add some All Purpose Flour to the dough and stir it.
Add the Veggie Purée to the mixture (strain the pulp, you can use the liquid for smoothies or just drink it right away, it taste sweet not bitter at all, but smell like raw veggie, if you ever try drink a wheat grass juice, it almost the same)
Add EVOO and sprinkle some Dried Basil into the Gnocchi Dough and knead.
Knead the dough until firm and shape into long shape.
Cut in smaller size and flaked.
Add the cheddar cheese into the flaked gnocchi dough. 
Close the edge and round it into a ball shape.
Roll with fork, to get a mark like Gnocchi used to be.
Boil the water in boiling pot, add the Gnocchi
Once the gnocchi looks bloated on the surface, it means cooked
(you can test with fork, if it's cook or not)
Drain and add more EVOO (to prevent stickiness)
 Sprinkle Dried Basil to give more aromatic herbs flavor

FYI :
Knead the dough longer, may improve the chewiness of the Gnocchi
Oat Flour can replace with any flour like Regular All Purpose Flour 
(because i find it quit mushy and not good enough, so i add a few table spoon of all purpose flour into the mixture and actually this gnocchi is not really that OATS Gnocchi, if you know what i mean) 
But still it taste good and healthier compare to regular Gnocchi, because i add veggie.
Another recipe i found from internet, some of them are using egg. 
I am not sure, what for, but i choose not to use any egg.
Knead is very essential to this step by step of home made Gnocchi Version, because you want all the potato and flour fully combined and become a good Gnocchi texture.
Another good tips is Boiled Potato no need to blitz in the blender, just mash it with fork or spoon,
to prevent the potato become too soft or mushy. Yes i did it, by blend it all the way, and it become like Potato Puree instead of Mashed Potato. But never mind, i am still learning and there always a room for improvement. Well i am not a pro cooking like chef, just a home chef. LOL
